You will learn where these cuts are from and how to prep and cook and of course, sample.
On the menu is:
Brisket and Gravy A new twist on an old classic
Smoked Tri-Tip One cut in two different preparations.
Cooked medium rare for a steak like taste and texture.
Cooked all the way for a brisket like taste and texture.
Teres Major A relatively unknown cut that has the taste and texture of filet but about 1/2 the price.
Flap steak Done in Sichuan Style
